Development of Green Banana Fruit Wines: Chemical Compositions and In Vitro Antioxidative Activities

Summary: This study aimed to develop functional fruit wines using green bananas. The quality, phenolic compounds, flavor components, and antioxidative properties of the wines were determined. The results showed that the antioxidant capacities of the wines were higher than the raw fruit samples, and the main flavor component was 3-methyl-1-butanol. The wines also exhibited protective effects against oxidative stress. This study provides a theoretical basis for defining the antioxidant characteristics of banana wines and developing nutraceuticals.

Discrimination of Musa banana genomic and sub-genomic groups based on multi-elemental fingerprints and chemometrics

Summary: This study assessed the potential of using multi-elemental fingerprints of unripe banana flour for classifying banana genomic and sub-genomic groups. The study found that the elemental concentration of N, P, K, Mg, Ca, Zn, Cu, Mn, Fe, and B can be used for classification. The results showed that the combination of multi-elemental fingerprinting and chemometrics is an effective method for classification of Musa genomic and sub-genomic groups.

Kluai Hin (Musa sapientum Linn.) peel as a source of functional polyphenols identified by HPLC-ESI-QTOF-MS and its potential antidiabetic function

Summary: This study identified polyphenols in Kluai Hin banana peel and pulp and investigated their potential antidiabetic activity. The findings revealed that banana peel contained abundant polyphenols and inhibited the activities of α-amylase and α-glucosidase. These results suggest that Kluai Hin banana peel may have potential antidiabetic effects.

Nutraceutical Difference between Two Popular Thai Namwa Cultivars Used for Sun Dried Banana Products

Summary: This study investigated the nutraceutical contents of two popular Kluai Namwa varieties, Mali Ong and Nuanchan, at different ripening stages, and compared the dried banana products made from these varieties. The results showed that both varieties had increasing moisture, total sugar, and total soluble solids during ripening, while total solids and texture values decreased. Rutin was the major flavonoid found in both varieties, and all flavonoids increased with ripening. There were no significant differences in flavonoid contents between the two varieties. Tannic acid, ellagic acid, gallic acid, chlorogenic acid, and ferulic acid were the main phenolic acids found in both varieties, and dopamine contents increased during ripening. Inulin as fructooligosaccharide increased with ripening. The study concluded that the two varieties could be used interchangeably in terms of nutraceutical contents in dried banana products.
