Development and characterization of ultrastable emulsion gels based on synergistic interactions of xanthan and sodium stearoyl lactylate

Chunhuan Liu et al.

Summary: The interactions between low-molecular-weight emulsifier (LME) and polymer in emulsion system were studied, and the mechanisms of stabilizing emulsions were investigated. It was found that LME was more efficiently adsorbed on the oil-water interface and formed a honeycomb structure, enhancing the stability of the emulsion gels.

Development and characterization of food-grade bigel system for 3D printing applications: Role of oleogel/hydrogel ratios and emulsifiers

Dengke Xie et al.

Summary: This study aimed to expand the knowledge and applications of bigels by creating food bigels for 3D printing. Various bigels were developed by combining a candelilla wax-based oleogel with a gelatin hydrogel at different ratios, with the presence of different emulsifiers. The influence of these ratios and emulsifiers on the physical properties and 3D printability of the bigels were studied. The results showed that adjustable physical and printing properties could be achieved by modifying the ratios and emulsifiers used.

Characteristics, formation mechanism and stability of high internal phase emulsions stabilized by porcine plasma protein (PPP)/carrageenan (CG) hybrid particles

Ping Yan et al.

Summary: This study investigated a newly developed high internal phase emulsion (HIPEs) using heat-denatured porcine plasma protein (PPP) nanoparticles as emulsifier. The addition of carrageenan (CG) significantly enhanced the emulsifying stability of the HIPEs, resulting in improved solid-like characteristics. The findings provide a theoretical direction for the application of PPP as an emulsifier in HIPEs.

Effects and mechanism of camellia saponin on the physicochemical and oxidative stability of camellia oil body-based emulsions

Jing Liu et al.

Summary: This study investigated the influence of camellia saponin on the stability and lipid oxidation of camellia oil body-based emulsions. It showed that camellia saponin had different effects on the stability of the emulsions at different pH conditions, and it effectively delayed lipid oxidation.

Low oil emulsion gel stabilized by defatted Antarctic krill (Euphausia superba) protein using high-intensity ultrasound

Sijie Hu et al.

Summary: This study investigated the preparation of low oil emulsion gels using high-intensity ultrasound, with defatted Antarctic krill protein used to stabilize the interface. The formed emulsion gel exhibited gel-like viscoelastic behavior and was stabilized by space steric hindrance and hydrophobic interactions between particles in the system.

Improve the physical and oxidative stability of O/W emulsions by moderate solidification of the oil phase by stearic acid

Yuehan Wu et al.

Summary: The study focused on enhancing the physical and oxidative stability of emulsions by moderate solidification of the oil phase, showing improved performance under stress conditions. Excessive solidification, however, led to adverse effects due to destruction of emulsion droplets. Moderate solidification was found to be a feasible and effective approach for industrial-scaled production.
