UniProt: the Universal Protein Knowledgebase in 2023

Summary: The UniProt Knowledgebase aims to provide comprehensive, high-quality, and freely accessible protein sequences annotated with functional information. The database has expanded its data processing pipeline and website to accommodate the increasing information content, with over 227 million sequences and plans to include a reference proteome for each taxonomic group. Detailed annotations are extracted from the literature to update or create reviewed entries, while unreviewed entries are supplemented with annotations from automated systems. The new website, https://www.uniprot.org/, offers enhanced user experience and easy access to data, including AlphaFold structures and improved protein subcellular localization visualizations.

Proteomics as a New-Generation Tool for Studying Moulds Related to Food Safety and Quality

Summary: Mould development in food is concerning for both food quality and safety due to spoilage and mycotoxin production. High-throughput proteomics has been applied to address these issues, providing useful approaches to minimize mould spoilage and the hazard associated with mycotoxins. Metaproteomics appears to be the most effective method for mould identification, despite current bioinformatics tool problems. Additionally, various high resolution mass spectrometry tools can evaluate the proteome of foodborne moulds, revealing their response under different conditions and the presence of biocontrol agents or antifungals.

Bio-based material-edible rosemary induced biodegradation of aflatoxin B1 via altering endogenous protective enzymes signatures in animal-derived foods

Summary: Utilization of bio-based material-edible rosemary is a green strategy to degrade Aflatoxin B1 (AFB1). The proteomics analysis shows that rosemary can activate glutathione S-transferase and decrease cytochrome P450 1A2 levels. Edible rosemary also improves the antioxidant status of goat meat and efficiently degrades AFB1.

Proteomic approach to unveil the ochratoxin A repression by Debaryomyces hansenii and rosemary on Penicillium nordicum during dry-cured fermented sausages ripening

Summary: This study examined the effectiveness of Debaryomyces hansenii yeast and rosemary leaves as biocontrol agents against Penicillium nordicum in the production of dry-cured fermented sausages. The results showed that adding yeast or rosemary leaves to the meat dough or casings reduced OTA accumulation. The presence of yeast led to a decrease in the abundance of P. nordicum proteins involved in OTA biosynthesis, and the combination with rosemary interfered with the cell wall integrity pathway linked to mycotoxin synthesis in molds.
