New definition of resistant starch types from the gut microbiota perspectives - a review

Summary: The current definitions of resistant starch (RS) types are mainly based on their interactions with human digestive enzymes in the upper gastrointestinal tract, and do not adequately consider their effects on gut microbiota. This review highlights the limitations of the current definitions and proposes new definitions of RS types from the perspective of gut microbiota, taking into account fermentation rate, fermentation end products, specificity towards gut microbiota, and shifts in gut microbiota caused by RS consumption.

Starch digestion retarded by wheat protein hydrolysates with different degrees of hydrolysis

Summary: Wheat protein hydrolysates (WPH) with different degrees of hydrolysis were prepared and mixed with rice starch. WPH, especially WPH30, reduced the rate of starch digestion and increased the content of slowly digestible starch due to the entanglement of starch chains and long-chain peptides. WPH60 and WPH120, containing more hydrophobic peptides and polar amino acids than WPH30, formed hydrogen bonds with starch molecules, resulting in the formation of a dense aggregate structure and increased resistant starch content. These findings are important for the development of hypoglycemic reformulated food.

Insights into the structural, morphological, and thermal property changes in simulated digestion and fermentability of four resistant starches from high amylose maize starch

Summary: The changes in the properties of different types of resistant starch during digestion were investigated. The crystal types of most resistant starch types remained unchanged during digestion. Native resistant starch had a higher short-chain fatty acid yield compared to other types. Different types of resistant starch had different effects on the proliferation of Bifidobacterium and Lactobacillus bacteria. This study highlights the importance of resistant starch type in influencing its properties during digestion.

Structural changes of thermally treated starch during digestion and the impact on postprandial glucose homeostasis

Summary: The intake of thermally treated starch can lead to elevated postprandial blood glucose levels and increase the risk of developing type 2 diabetes. This study found that thermally treated rice starch caused a significant increase in blood glucose levels, higher insulin response, lower GLP-1 concentration, and accelerated food absorption. The thermal treatment also resulted in structural changes in the starch which made it more susceptible to enzymatic digestion.

Short chain fatty acids (SCFAs) are the most abundant bacterial metabolites in the human body and play an important role in metabolic, endocrine, and immune functions. Diet can influence the composition and activity of the gut microbiota, as well as SCFAs production and metabolic effects.

Summary: A stable isotope dilution ultrahigh-performance liquid chromatography triple quadrupole tandem mass spectrometry (UHPLC-QqQMS/MS) method was developed and validated for simultaneous determination of CML, CEL, and AA in baked and fried foods. The method showed good linearity, sensitivity, accuracy, and precision, with recovery rates ranging from 90.2-108.3% on baby biscuit and French fries samples. Additionally, the method was successfully applied to analysis of 11 baked and fried food samples.

Highly branched corn starch: Preparation, encapsulation, and release of ascorbic acid

The results showed that HBCS could serve as a potential highly branched carrier and the formation of HBCS-AA inclusion complex was confirmed by DSC.
