Bioinformatic Approaches for Characterizing Molecular Structure and Function of Food Proteins

Harrison Helmick et al.

Summary: Structural bioinformatics aims to uncover molecular drivers of food functionality by analyzing protein structural models. Tools are developed to extract relevant information from protein databases and organize it for researchers interested in studying protein functionality. Food bioinformaticians utilize protein amino acid sequences and structures to model functionality, such as solubility, thermostability, and emulsification, by extracting features like surface hydrophobicity. The field benefits from a protein structure-function relationship framework, where bioinformatic properties are linked to physicochemical experimentation. Strong bioinformatic correlations exist for protein secondary structure, electrostatic potential, and surface hydrophobicity. The study of modeling changes in protein structures through molecular mechanics is a rapidly developing field that will continue to advance food science research.

Genetic dissection of embryo size and weight related traits for enhancement of kernel oil in maize

Ashvinkumar Katral et al.

Summary: Embryo is a crucial determinant of kernel-oil in maize, and understanding the genetic behavior of embryo size and weight related traits is essential for improving kernel-oil. Through field evaluation and genetic analysis, this study found that these traits exhibit a quantitative inheritance pattern with high heritability and stability across locations. Furthermore, the study predicted the presence of one to three major gene blocks/QTLs for embryo traits and up to 11 major gene blocks/QTLs for embryo-to-kernel traits.

Sunflower WRINKLED1 Plays a Key Role in Transcriptional Regulation of Oil Biosynthesis

Audrey R. Q. Lim et al.

Summary: This study identifies and characterizes HaWRI1, a sunflower ortholog of the transcription factor WRI1, which is highly expressed in developing seeds and stimulates oil accumulation. It is demonstrated that HaWRI1 acts as a pivotal transcription factor controlling the expression of genes involved in late glycolysis and fatty acid biosynthesis. The study also highlights the importance of an 80 amino-acid C-terminal domain of HaWRI1 for its transactivation. Additionally, seed-specific overexpression of HaWRI1 in Arabidopsis plants leads to enhanced seed oil content, suggesting its potential for bioengineering sunflower oil yield improvement.

Allelic Variation in Zmfatb Gene Defines Variability for Fatty Acids Composition Among Diverse Maize Genotypes

Ashvinkumar Katral et al.

Summary: This study provides a comprehensive molecular characterization of the fatb gene in maize and various orthologues, revealing genetic variations and potential candidates for modifying fatty acid profiles. The study also sheds light on the genetic relationship between the fatb gene in maize and other oilseed crops, contributing to our understanding of the diversity of unsaturated fatty acid oils.

Genetic architecture of embryo size and related traits in maize

Xiaowei Li et al.

Summary: The embryo in maize plays a critical role in controlling kernel nutrition components and grain yield. The genetic architecture of maize embryo size and its related traits is dominated by multiple small-effect loci with little epistasis. Several key loci associated with multiple traits, including cloned maize genes and maize orthologs of known rice genes, were identified. The findings provide a foundation for improving embryo-size-mediated kernel nutrition and grain yield.

Oil plant genomes: current state of the science

Jia-Ming Song et al.

Summary: This review discusses the current knowledge of genome assembly, characteristics of oil plant genomes, and research progress of pan-genomics in oil plants. Oil plant genomes are highly diverse, and their genetic variation leads to a diversity in oil biosynthesis and accumulation along with agronomic traits. The availability of complete high-resolution genomes and pan-genomes has enabled the identification of structural variations in the genomes that are associated with the diversity of agronomic and environment fitness traits.
