Effect of the addition of soluble polysaccharides from red and white grape skins on the polyphenolic composition and sensory properties of Tempranillo red wines

Intermolecular binding of blueberry anthocyanins with water-soluble polysaccharides: Enhancing their thermostability and antioxidant abilities

Summary: This study investigated the protective effect of beta-glucan (BG), konjac glucomannan (KGM), and xanthan gum (XG) on the thermo-stability and antioxidant capacities of blueberry anthocyanins (ACN) and their interactions. The results showed that these three polysaccharides (XG > KGM > BG) can preserve the color, stability, and antioxidant capabilities of ACN. The interaction between ACN and specific zones of these polysaccharides was confirmed through UV-visible spectra, SEM, and DLS. The introduction of the three polysaccharides, especially XG, improved the thermostability of ACN through intermolecular interactions mainly via hydrogen bonding.

Nanoparticles prepared by polysaccharides extracted from Biyang floral mushroom loaded with resveratrol: Characterization, bioactivity and release behavior under in vitro digestion

Summary: In this study, novel nanoparticles (RES-CBFMP NPs) using floral mushroom polysaccharide as the wall material were developed for delivering RES, addressing its poor water solubility and low bioavailability. After ratio optimization, RES-CBFMP NPs (RES-CBFMP, 1:8 w/w) showed high encapsulation efficiency (49.74%) and loading efficiency (5.53%), with a particle size of 158.56 nm and zeta-potential of -17.56 mV. Furthermore, RES-CBFMP NPs demonstrated good physicochemical stabilities, sustained gastrointestinal release, and improved antioxidant and anticancer activities. This study contributes to the development of RES oral delivery systems and the use of hydrophobic active molecules in the functional food field.

Fabrication of flavour oil high internal phase emulsions by casein/pectin hybrid particles: 3D printing performance

Summary: In this study, 3D printable oil/water high-internal-phase emulsions (HIPEs) with flavor oil were fabricated using casein/pectin hybrid particles as stabilizers. Increasing pectin content led to higher viscosity and gel strength of the HIPEs, which could be 3D printed while maintaining the designed shape and structure. These 3D printable HIPEs have promising applications in the food, medical, and cosmetic industries.

Chemical structure and inhibition on α-glucosidase of polysaccharides from corn silk by fractional precipitation

Summary: This study aimed to explore the effect of different corn silk polysaccharide fractions obtained by ethanol precipitation on their physicochemical properties and biological activities. The results showed that the fractions exhibited differences in physical properties and activities, with CSP80 showing stronger antioxidant activity and alpha-glucosidase inhibitory activity. Enzyme kinetic analysis indicated that CSP80 inhibited alpha-glucosidase by mixed type and reversible mechanisms, and fluorescence intensity measurements confirmed changes in the secondary structure of alpha-glucosidase due to the binding of CSP80. Isothermal titration calorimetry results illustrated that the binding of CSP80 to alpha-glucosidase complex was driven by enthalpy and hydrogen bonds played a major role in the binding process.
