Minimally processed fruits as vehicles for foodborne pathogens

Summary: The consumption of minimally processed fruit (MPF) has increased due to the novel trend in the food market and consumers' demand for fresh, organic, convenient foods. However, the microbiological safety of MPF has caused concerns as it may be a foodborne vehicle for pathogens. Cases of foodborne diseases linked to MPF, particularly Salmonella enterica, Escherichia coli, Listeria monocytogenes, and Norovirus, have been reported. Microbial spoilage is also a significant issue with economic implications. Therefore, establishing effective control measures and coordinated strategies is crucial for enhancing the safety of MPF.

Ameliorative effect of melatonin against storage chilling injury in pomegranate husk and arils through promoting the antioxidant system

Summary: This study investigates the effect of melatonin treatment on the chilling tolerance, postharvest quality, and antioxidant system of pomegranate fruit during cold storage. The results show that melatonin treatment improves chilling tolerance by reducing electrolyte leakage and increasing total phenol content. Melatonin also regulates enzyme activity and inhibits harmful substance accumulation in the fruit.

Amelioration of chilling injury and enhancement of quality maintenance in cold-stored guava fruit by melatonin treatment

Summary: The influence of melatonin treatment on the quality and chilling injury of guavas during cold storage was evaluated. The study showed that melatonin treatment significantly reduced fruit respiration rate, weight loss, cell membrane permeability, and chilling injury index, while increasing commercially acceptable fruit rate, peel color, and chlorophyll content. Melatonin treatment also delayed the deterioration of fruit firmness, sugars, vitamin C, acidity, and soluble solids.

Effect of chitosan-based melatonin composite coating on the quality of minimally processed pomegranate aril-sacs during cold storage

Summary: This study evaluated the potential of a chitosan-based melatonin composite coating to maintain the quality and delay senescence of minimally processed pomegranate aril-sacs during refrigerated storage. The results showed that the coating treatments significantly delayed weight loss and respiration rate, retained desirable properties such as color, ascorbic acid content, anthocyanin content, and antioxidant capacity, and suppressed surface browning development. The recommended treatment concentration for optimal results was 0.8-1 mM melatonin. The findings of this study have important implications for preserving the quality and extending the storage life of minimally processed pomegranate aril-sacs.
