Viewpoint: Are food labels good? *

Summary: The benefits of food labels and how to quantify them pose persistent challenges for public officials, with various approaches facing objections. While willingness-to-pay questions have advantages, practical issues such as lack of information and behavioral biases may limit their effectiveness in capturing welfare effects. Focusing on the actual experience of individuals with food labels may provide a better understanding of their impacts on welfare compared to solely relying on willingness to pay measurements.

Does Information Disclosure Improve Consumer Knowledge? Evidence from a Randomized Experiment of Restaurant Menu Calorie Labels

Even with calorie labels, consumers still have a significant percentage of error in estimating the calorie content of their meals.
