Effect of solvent mixtures on the ultrasound-assisted extraction of compounds from pineapple by-product

The extracts were characterized for their phenolic profile, sugar composition, and antioxidant potential. The results showed that the mixture of ethanol and acid solution exhibited the highest efficiency in extracting total phenolic compounds and antioxidant activity. By controlling the time, temperature, and ultrasonic power, extracts with specific phenolic acids and soluble sugars were obtained. Therefore, this study provides an alternative method for the valorization of pineapple waste.
