High-intensity ultrasound promoted the maturation of high-salt liquid-state soy sauce: A mean of enhancing quality attributes and sensory properties

Effects of ultrasound on disrupting metabolite profiles of Pseudomonas fluorescens biofilms cultured on the surface of lettuce

Summary: This study investigated the efficacy of ultrasound-based cleaning treatment on removing Pseudomonas fluorescens biofilm from lettuce. The results showed that higher intensity of ultrasound led to a significant decrease in biofilm content on lettuce. Additionally, quality attributes of lettuce remained largely unchanged under ultrasound treatment at the highest intensity level. Metabolomic analysis revealed differential expression of 27 metabolites involved in various metabolic pathways in ultrasound-treated bacteria. The findings suggest that ultrasound treatment can disrupt the metabolism and genetic information of bacterial biofilm, but also induce stress responses in the bacteria.

Characteristics of microbial community, taste, aroma of high-salt liquid-state secondary fortified fermented soy sauce

Summary: The secondary fortified fermentation (SFF) process was developed to enhance the flavor and quality of brewed soy sauce by improving the primary fermentation (PF) process and obtaining information on changes in fermentation flora. SFF soy sauce had better physicochemical indicators than PF soy sauce, with the ammonia-nitrogen (AN) content reaching 13.53 g/L, overcoming the bottleneck of PF soy sauce. The increased content of umami, sweet, and bitter free amino acids (FAAs) in SFF soy sauce resulted in a superior taste compared to PF soy sauce. GC-MS analysis revealed a greater quantity and variety of volatile flavor compounds (VFCs) in SFF soy sauce, contributing to a richer aroma. The characteristics of microbial community and correlation analysis indicated that the SFF process amplified the effects of beneficial flavor bacteria from PF, which was significant for improving soy sauce flavor and evolving beneficial fermentation flora.

Characterization of the key aroma compounds in soy sauce by gas chromatography-mass spectrometry-olfactometry, headspace-gas chromatography-ion mobility spectrometry, odor activity value, and aroma recombination and omission analysis

Summary: Previous studies mainly used gas chromatography-mass spectrometry (GC-MS) to analyze volatile compounds in soy sauce. This study employed both GC-MS and headspace-gas chromatography-ion mobility spectrometry (HS-GC-IMS) to qualitatively and quantitatively analyze the volatile compounds in high-salt liquid-state fermentation soy sauce (HLFSS). The results revealed that there were 174 substances detected, with 87 detected by HS-GC-IMS and 127 by GC-MS. Aldehydes, ketones, esters, and alcohols were identified as the major compounds in HLFSS. Additionally, some compounds like ethyl pyruvate, (E)-2-pentenal, and diethyl propanedioate were newly detected using HS-GC-IMS.

In vitro and in silico approaches to investigate antimicrobial and biofilm removal efficacies of combined ultrasonic and mild thermal treatment against Pseudomonas fluorescens

The results showed that the treatment effectively destroyed and removed the biofilm, and inactivated the bacteria. High-intensity ultrasound promoted the aldol-type condensation as an alternative mean of synthesizing pyrazines in a Maillard reaction model system of D-glucose-13C6 and L-glycine

Summary: This study evaluated the promotion of pyrazine generation by high-intensity ultrasound (HIU) in a glucose-glycine Maillard reaction (MR) model system. The carbon skeleton of the intermediate and final MR products (MRPs) was elucidated using the carbohydrate module labeling (CAMOLA) technique. The results showed that the concentration of pyrazines in the HIU-MR model system was significantly higher than in the thermal MR. Further analysis revealed that HIU promoted aldol-type condensation and the cleavage of D-glucose, contributing to the synthesis of pyrazines.

Characterization of odor-active compounds in high-salt liquid-state soy sauce after cooking

Evaluating the effect of lactic acid bacterial fermentation on salted soy whey for development of a potential novel soy sauce-like condiment

Summary: This study aimed to investigate the effect of salt concentration on the growth and fermentation characteristics of four lactic acid bacteria (LAB) in soy whey. The results showed that higher salt concentration suppressed the growth and metabolic activity of non-halophilic LAB, but enhanced the growth and acid production of halophilic LAB. To develop a soy sauce-like condiment, yeast fermentation and Maillard reaction may be necessary to generate the characteristic aroma compounds associated with soy sauce.

Comparative study on the novel umami-active peptides of the whole soybeans and the defatted soybeans fermented soy sauce

Summary: The study found that umami-active fractions and <= 3 kDa peptides were mainly concentrated in the supernatants resulted from the treatment with 60% ethanol and the precipitates resulted from the treatment with 80% ethanol. The contents of certain components in SSS were higher than those in SSD, and several tasty peptides were identified in both SSS and SSD, with some peptides identified in SSS and SSD not previously reported. Most of the peptides separated from SSD and SSS could enhance the umami taste of soy sauce, with slightly more kokumi and bitterness hydrophobic peptides found in SSS than SSD.

Characterization of key odor-active compounds in commercial high-salt liquid-state soy sauce by switchable GC/GC x GC-olfactometry-MS and sensory evaluation
