Effects of black soybean powder particle size on the characteristics of mixed powder and wheat flour dough

Summary: This study investigated the effects of different particle sizes of black soybean powder on the characteristics of mixed powders and dough prepared with black soybean powder and wheat flour. It was found that particle size influenced the water retention capacity, oil binding capacity, digestibility, and dough properties. Superfine black soybean powder had the highest lipid and fiber content but the lowest water retention capacity and oil binding capacity.

Use of two-stage dough mixing process in improving water distribution of dough and qualities of bread made from wheat-potato flour

Summary: The two-stage dough mixing process improved the qualities of bread made from potato flour and wheat flour, resulting in higher specific volume and lower crumb hardness. This was achieved by enhancing gluten matrix formation and reducing competitive water absorption between gluten and gelatinized starch, leading to better development of gluten network.

The relationship between amylopectin fine structure and the physicochemical properties of starch during potato growth

Summary: The relationship between the structural and functional properties of starch isolated from Atlantic potatoes at different growth stages was explored in this study, with significant variations observed in molecular size and chain-length distribution of amylopectin. Overall, different starch chains showed different trends during potato growth, and physicochemical properties were significantly affected by amylopectin fine structure.
