Free-Radical-Initiated Phospholipid Oxidations at the Air-Water Interface: The Oxidation of Unsaturated and Saturated Fatty Acid Chains

Summary: Research shows that at the air-water interface, the oxidation process of unsaturated and saturated fatty acid chains in phospholipids initiated by the photoinitiator 2,4,6-trimethylbenzoyl diphenylphosphine oxide (TMDPO) does not result in peroxidation products. A unique methodology called FIDI-MS is used to detect the products, revealing that double bonds on the oleyl chains are first oxidized into epoxides followed by oxidation of other saturated carbon atoms into carbonyl groups.
