Oxidative changes in cooled and cooked pale, soft, exudative (PSE) chicken meat

Summary: This study explored the mechanisms involved in the oxidative changes of PSE chicken meat during storage and cooking. The results indicated that myoglobin, lipid, and protein oxidation occurred simultaneously and promoted each other in PSE chicken meat. Transition metals and metmyoglobin played crucial roles in triggering lipid and protein oxidation in cooled and cooked PSE, while light exposure had a secondary effect. Different pathways were involved in the production of compounds from oxidative reactions in cooled and cooked PSE chicken meat.
