Emulsions, particularly those containing ferric sodium EDTA, have emerged as potential delivery systems for food fortification, due to their higher bioavailability and ability to inhibit the binding of iron to polyphenols and phytates. The hydrophilic emulsifier complex of sodium caseinate and sodium alginate provides stability to the interface and enables controlled release of iron.

The relationship between charge intensity and bioactivities/processing characteristics of exopolysaccharides from lactic acid bacteria

Summary: The application of plant-based protein gels induced by lactic acid bacteria fermentation is closely related to the bioactivities and processing characteristics of exopolysaccharide (EPS). Among the EPS produced by different strains of Lactobacillus, CEPS showed the highest inhibition rates against various enzymes and possessed the highest water solubility index and water holding capacity. The EPS had high melting points, and their flow behavior and temperature-dependent behavior were well fitted with specific models, while CEPS had high negative charge intensity as supported by zeta potential, which could be used to evaluate bioactivities.

Summary: This study found that the novel exopolysaccharide EPSRam12 produced by Lacticaseibacillus rhamnosus Ram12 has a protective effect against D-galactose-induced brain injury and gut microbiota dysbiosis in mice. EPSRam12 increases antioxidant enzymes and anti-inflammatory cytokines in the brain, while improving gut mucosal barrier function and increasing short-chain fatty acids levels in the intestine. It also restores gut microbial diversity by enriching beneficial microbial genera and decreasing pathogenic bacteria.

Structure characterization of a pyruvated exopolysaccharide from Lactobacillus plantarum AR307

LPE-1 was found to contain Galp and Glcp at a molar ratio of 2:1, with a molecular weight of 605 kDa.
