Acrylamide content of industrial and traditional popcorn collected from Tehran's market, Iran: A risk assessment study

Summary: This study analyzed the concentration of acrylamide in industrial and traditional popcorn sold in Tehran, Iran in the spring of 2021. Acrylamide was detected in most samples, with the average content being higher in traditional popcorn compared to industrial popcorn. The study suggests that popcorn can be a potential source of acrylamide exposure in the adolescent population, posing a health risk.

Summary: Acrylamide, a known carcinogenic compound formed in carbohydrate-rich food, poses a high risk for young children, especially in powder infant formulas. Analysis showed that acrylamide levels vary in infant formulas designed for different age categories, with higher levels found in formulas for older infants. Factors such as protein, carbohydrate, humidity, salt, and antioxidant content play a role in acrylamide formation in these products.

Comprehensive survey and health risk assessment of antibiotic residues in freshwater fish in southeast China

Summary: This study analyzed 65 antibiotic residues in 10 freshwater fish species in southeast China and found that some fish samples exceeded maximum residue limits and showed misuse of human antibiotics. Residues were higher in benthic predatory fish. However, the consumption of cultured fish from this region does not pose a serious health risk.

The role of additives on acrylamide formation in food products: a systematic review

Summary: Acrylamide (AA) is a toxic substance formed in carbohydrate-rich food products, and its formation can be reduced by adding certain additives. The type of food consumed also affects the intake of AA. Strategies such as reducing precursors of AA, decreasing sugars, and adjusting processing conditions can be applied to limit AA formation. Coatings containing proteins, enzymes, and phenolic compounds have shown promise in reducing AA content. However, some additives can actually increase AA formation. It is important to identify suitable food additives to minimize health risks for consumers. This study focuses on different additives proven to be effective in reducing or promoting AA formation in food products.
