Heating affects protein digestion of skimmed goat milk under simulated infant conditions

Qing Ren et al.

Summary: This study analyzed the effects of heating on the digestion of skimmed goat milk proteins, and found that different heating temperatures affected the digestion rate, clot formation, and bioactive peptide abundance of the proteins.

Oral impairments decrease the nutrient bioaccessibility of bread in the elderly

Susana Ribes et al.

Summary: This study aimed to evaluate the impact of oral deficiencies on the digestibility of starch and protein in bread. The results showed that oral deficiencies resulted in inadequate food fragmentation, affecting the digestion of starch and protein. Analysis of particle size, digestibility, FTIR spectroscopy, and microstructure revealed how oral deficiencies modify the digestion process of food.

Glycation of soy and pea proteins influences infant gastric digestibility more than intestinal digestibility

Jiaying Tang et al.

Summary: Dry heating alters the physicochemical properties and in vitro digestion of soy and pea proteins. Prolonged dry heating increases glycation in the presence of glucose, resulting in decreased gastric hydrolysis. However, intestinal digestion is less affected, possibly due to the presence of a broad range of proteases. Dry heating without glucose leads to limited insoluble aggregates, but does not affect digestibility.

Glycemic response, satiety, gastric secretions and emptying after bread consumption with water, tea or lemon juice: a randomized crossover intervention using MRI

Daniela Freitas et al.

Summary: This study investigated the gastric emptying, appetite perceptions, and glycemic responses to bread consumed with water, tea, or lemon juice. The results showed that compared to water, lemon juice increased gastric volume and emptying rate, and reduced the glycemic response. Tea had no effect. Changes in appetite perceptions and gastric volumes were correlated.

The contribution of gastric digestion of starch to the glycaemic index of breads with different composition or structure

Daniela Freitas et al.

Summary: This study investigates the relationship between bread density, oral and gastric digestion, and glycaemic index (GI). The results suggest that higher bread density is associated with a lower GI, possibly due to the impact of gastric digestion on the proportion of starch remaining to be digested in the small intestine.

Effect of age-related in vitro human digestion with gut microbiota on antioxidative activity and stability of vitamins

Seung Yun Lee et al.

Summary: The study aimed to investigate the impact of age (adults vs elderly) on antioxidant activity, digestibility, and stability of vitamins (vitamin C, vitamin B-6, and vitamin B-12) during in vitro human digestion. Results showed that the antioxidant activity and digestibility of vitamin C were not influenced by age, digestion phase, or the presence of gut microbiota, but its stability decreased in the presence of gut microbiota. The activities of vitamins B-6 and B-12 were affected by age, digestion phase, and the presence of gut microbiota. These findings could aid in developing strategies to enhance bioavailability of vitamin B-6 and B-12 in the human body by considering age and digestive conditions.

Persistence of Anti SARS-CoV-2 Antibodies in Breast Milk from Infected and Vaccinated Women after In Vitro-Simulated Gastrointestinal Digestion

Joaquim Calvo-Lerma et al.

Summary: This study assessed the persistence of antibodies against SARS-CoV-2 in the gastrointestinal tract of infants from vaccinated and infected women. The results showed that antibody levels were reduced after in vitro-simulated gastrointestinal digestion, but remained present. The digested antibodies did not have an impact on infant gut microbiota.

The Effect of Infant Gastric Digestion on Human Maternal Milk Cells

Rose Doerfler et al.

Summary: This study finds that gastric digestion results in the death of milk cells, primarily through caspase-mediated apoptosis caused by acidic pH. The non-cellular components of milk provide only mild protection against cell death from stomach acid. Gastric digestion does not favor the survival of specific cell populations, as most cell types die in equal proportions in the gastric environment. These findings contribute to our understanding of the fate of human breast milk cells in the infant's intestine and beyond.

Advances in static in vitro digestion models after the COST action Infogest consensus protocol

Raffaella Colombo et al.

Summary: In vitro digestion models are crucial for predicting the bioaccessibility and bioactivity of food molecules or natural products. Static methods, despite their simplicity, have a wide applicability in the nutritional, pharmaceutical, and toxicological fields and offer advantages over dynamic models in terms of reproducibility and avoiding inter-individual variations of in vivo experiments. The standardization efforts, such as the Infogest consensus method, have helped harmonize experimental conditions and facilitate the comparison of studies and data in the field of in vitro static digestion methods.

Relationship among oral health status, bolus formation and food comfortability during consumption of model cheeses in elderly

L. Lorieau et al.

Summary: The study found that oral health status does not significantly affect chewing behavior in elderly individuals, but those with poor dental status tend to form harder food boluses. Oral comfort level is weakly associated with dental status, while food comfortability is independent of bolus hardness and moistening, regardless of dental status.
