Encapsulation of hydrophobic capsaicin within the aqueous phase of water-in-oil high internal phase emulsions: Controlled release, reduced irritation, and enhanced bioaccessibility

Xiaolin Wu et al.

Summary: Capsaicin entrapped in water-in-oil high internal phase emulsions using a pH-driven method showed enhanced bioaccessibility and reduced mucosal irritation, suggesting that W/O HIPEs may be a useful delivery system for active ingredients with undesirable flavor profiles and low bioaccessibilities.

Impact of polysaccharide mixtures on the formation, stability and EGCG loading of water-in-oil high internal phase emulsions

Ce Cheng et al.

Summary: Water-in-oil high internal phase emulsions (W/O HIPEs) were prepared using polyglycerol polyricinoleate (PGPR) and polysaccharide blends consisting of konjac glucomannan (KGM) and octenyl succinic anhydride starch (OSA-starch). By adjusting the ratio of KGM and OSA-starch, the formation, stability, and functionality of these emulsions were varied. The study showed that the W/O HIPEs exhibited good stability and colloid characteristics, providing new insights into utilizing emulsion technology to improve the nutritional profile of oily foods.

Aqueous solutions of glycolic, propionic, or lactic acid in substitution of acetic acid to prepare chitosan dispersions: a study based on rheological and physicochemical properties

Lucas de Souza Soares et al.

Summary: Chitosan, a biopolymer derived from chitin, has various applications and can be dispersed in different acidic aqueous media to evaluate its properties. The concentration and type of organic acid affect the characteristics of the dispersions, while the acid type has less influence on properties such as pH and density.

Using hydrogels in dispersed phase of water-in-oil emulsion for encapsulating tea polyphenols to sustain their release

Haiyan Tian et al.

Summary: This study aimed to encapsulate tea polyphenols in carriers to increase their stability and retention rate. It was found that the XG/LBG mixture in the water-in-oil emulsion could enhance the stability of tea polyphenols, resulting in a high retention rate of over 70% after 30 days of storage at 25 degrees C.

Enhancing the oxidative stability of algal oil emulsions by adding sweet orange oil: Effect of essential oil concentration

Na Xu et al.

Summary: The study found that the addition of sweet orange essential oil (SOEO) can enhance the oxidation stability of algal oil emulsion, increase the absorbed protein level, possibly by enhancing the interfacial thickness through interaction with casein molecules, and retard the oxidation of omega-3 oils inside lipid droplets.

Fat crystal-stabilized water-in-oil emulsion breakdown and marker release during in vitro digestion

Vivekkumar Patel et al.

Summary: Continuous phase fat structuring affects the release of model markers in water-in-oil emulsions. Network-stabilized emulsions show the lowest extent of marker release, with bile salts making the greatest contribution to stability and release. Fat phase structuring is a key parameter in controlling emulsion breakdown and marker release.

Stability and rheological properties of water-in-oil (W/O) emulsions prepared with a soyasaponin-PGPR system

Yueying Pan et al.

Summary: This study aimed to develop an innovative water-in-oil emulsion using soyasaponin and PGPR as emulsifiers. By adjusting the oil/water ratio and Ssa concentration, the most stable emulsion was found to have a water/oil ratio of 30/70, with further stability enhancement achieved by increasing the concentration of Ssa and PGPR. Results also showed a synergistic effect between 3% PGPR and 1% Ssa on the stability of the emulsion, indicating potential applications for delivering functional components.
