Consecutive reaction kinetics model reveals the nature of long-term rice amylopectin retrogradation characteristics

Cheng Li

Summary: A consecutive reaction kinetics model (CRK) was developed in this study to fit long-term retrogradation kinetics curves for 10 rice starches with distinct molecular structures. Results showed that the nucleation and crystal growth steps of starch retrogradation were controlled by distinct starch fine molecular structures, providing practical applications for regulating the nutritional properties of starch-based foods.

Effects of Betanin on Pasting, Rheology and Retrogradation Properties of Different Starches

Taotao Dai et al.

Summary: This study investigated the impact of betanin on the pasting, rheology, and retrogradation properties of different starches. It was found that betanin decreased viscosity in rice and potato starches, but increased viscosity in pea starch. The study also revealed that betanin could inhibit retrogradation and maintain the color of starch pastes during storage.

Combined effects of starch fine molecular structures and water content on starch digestibility of cooked white rice

Xueer Yi et al.

Summary: The starch digestibility of cooked white rice is affected by the starch molecular structure and water content. Higher amylose content results in lower digestion extent with the same water content. Having more and longer amylopectin intermediate chains leads to a slower starch digestion rate, but only within specific rice-to-water ratios.

Impacts of Protein from High-Protein Rice on Gelatinization and Retrogradation Properties in High- and Low-Amylose Reconstituted Rice Flour

Yitong Zhao et al.

Summary: High-protein rice has inferior taste attributes compared to low-protein rice. This study found that the interaction between protein and amylose affects the gelatinization and retrogradation properties of rice flour. High-amylase rice flour increased certain parameters, while protein addition decreased some parameters.

Effects of endogenous proteins and lipids on structural, thermal, rheological, and pasting properties and digestibility of adlay seed (Coix lacryma-jobi L.) starch

Yangyue Ding et al.

Summary: This research found that the effects of endogenous proteins on adlay seed starch were more significant than those of endogenous lipids. Removal of proteins and lipids had noticeable impacts on the physicochemical properties of starch, leading to a decrease in thermal stability.

In vitro digestion rate of fully gelatinized rice starches is driven by molecular size and amylopectin medium-long chains

Cheng Li et al.

Summary: The study found that fully gelatinized rice starches have two simultaneous digestion fractions (fast versus slow), with the rate constants of the slowly-digestible fraction significantly correlated with starch molecular sizes, especially with that of amylopectin molecules. Hydrodynamically larger amylopectin molecules tend to contain more shorter branches but less long chains, impacting the overall digestion rate.

Effects of different storage temperatures on the intra- and intermolecular retrogradation and digestibility of sago starch

Cheng Li et al.

Summary: This study investigated the effects of different storage temperatures on the retrogradation property and in vitro digestibility of gelatinized sago starch. Lower storage temperature (-20°C) resulted in higher amount of double helices but less thermal stability, whereas room temperature storage increased the stability and heterogeneity of crystallites. The digestion rate was significantly lowered after -20°C storage, possibly due to crystallite heterogeneity, thermal stability, and ratio of inter-to intramolecular double helices.
