Protective Effects of N Acetylcysteine and Vitamin E against Acrylamide-induced Neurotoxicity in Rats

Summary: The aim was to investigate the protective effects of N-acetylcysteine (NAC) and/or vitamin E (Vit E) against acrylamide (ACR)-induced neurotoxicity. Rats were classified into different groups and treated with either NAC or Vit E alone or in combination with ACR. ACR ingestion resulted in various effects, including inhibition of acetylcholinesterase (AChE), depletion of glutathione, increased malondialdehyde (MDA) levels, and decreased activities of superoxide dismutase (SOD) and catalase (CAT). NAC or Vit E supplementation significantly reduced these adverse effects.

Activating SphK1 improves the survival rate and decreases apoptosis rate of nerve cells. Additionally, activation of SphK1 regulates the activity of the MAPK signaling pathway.

Associating acrylamide internal exposure with dietary pattern and health risk in the general population of Taiwan

Summary: Three epidemiological studies have shown an inverse association between prenatal acrylamide exposure and birth size. This study further investigates this relationship and the interaction with genetic variations in acrylamide-metabolizing genes. The results suggest that prenatal dietary acrylamide exposure, particularly in the form of its metabolite glycidamide, is inversely associated with birth weight, length, and head circumference. Interaction patterns with certain genetic variations may indicate causality, but further studies are needed for confirmation.
