Physicochemical, Microbial, and Volatile Compound Characteristics of Gochujang, Fermented Red Pepper Paste, Produced by Traditional Cottage Industries

Srinivasan Ramalingam et al.

Summary: This study analyzed the quality of gochujang from 35 traditional cottage industries, finding that some products exceeded the recommended alcohol content for halal products and had slight Bacillus cereus contamination. It suggests the need to limit B. cereus contamination and reduce alcohol content to comply with halal food guidelines.

Comparison of laxative effects of fermented soybeans (Cheonggukjang) containing toxins and biogenic amines against loperamide-induced constipation mouse model

Ha-Rim Kim et al.

Summary: The study compared the laxative effect of Cheonggukjang containing high or low levels of toxins and biogenic amines in a mouse model of constipation induced by Lop. Results showed that both high and low toxin-containing Cheonggukjang significantly improved stool frequency, fecal weight, water content, gastrointestinal transit, and histological alterations in the mice.

γ-PGA-Rich Chungkookjang, Short-Term Fermented Soybeans: Prevents Memory Impairment by Modulating Brain Insulin Sensitivity, Neuro-Inflammation, and the Gut-Microbiome-Brain Axis

Do-Youn Jeong et al.

Summary: Fermented soybean paste, specifically Chungkookjang from Korea, has unique characteristics due to its short-term fermentation without salt and predominance of Bacilli. Different Bacillus species in different regions contribute to different functionalities and bioactive components of Chungkookjang. This fermented food has shown promising effects on memory function and inflammation reduction.

The protective role of daidzein in intestinal health of turbot (Scophthalmus maximus L.) fed soybean meal-based diets

Guijuan Yu et al.

Summary: This study demonstrates that daidzein can ameliorate soybean meal-induced enteropathy (SBMIE) in juvenile turbot, by attenuating intestinal inflammatory response, oxidative stress, mucosal barrier injury and microbiota community disorder. Daidzein acts through up-regulation of anti-inflammatory cytokine gene expression, down-regulation of pro-inflammatory cytokine gene expression, and modification of gut microbiota composition.

Protective Effect of Gochujang on Inflammation in a DSS-Induced Colitis Rat Model

Patience Mahoro et al.

Summary: Gochujang, a traditional Korean fermented soy-based spicy paste, demonstrates anti-inflammatory effects in DSS-induced colitis by improving disease activity index, colon weight/length ratio, and histomorphology, reducing inflammatory factors, and modulating gut microbiota composition. In contrast, intake of salt alone does not significantly impact colitis symptoms or cytokine levels, and decreases gut microflora diversity.
