Modification of ovalbumin by the enzymatic method: Consequences for foaming characteristics of fibrils

Summary: This study investigates the effect of different trypsin concentrations on the formation and foaming properties of ovalbumin protein amyloid fibrils. The results show that moderate modification promotes protein unfolding and elongation of fibrils, leading to the formation of worm-like fibrils. Additionally, the compact structure of modified fibril aggregates enhances foaming ability and stability. Enzyme-modified OVA fibrils could be a promising method to expand the application of foaming agents and stabilizers in the food industry.

Development of pH-responsive emulsions stabilized by whey protein fibrils

Summary: Globular proteins can form fibrillar structures under suitable pH and ionic strength conditions. Whey protein isolate fibrils (WPIFs) were investigated for their potential as stabilizers in creating pH-responsive emulsions. The properties of WPIF-emulsions were different from those of WPI-emulsions, with insights into the molecular origin of these effects obtained by measuring interfacial properties. The research demonstrates that the functional performance of food proteins can be extended by creating fibril structures.

Structure remodeling of soy protein-derived amyloid fibrils mediated by epigallocatechin-3-gallate

Summary: This study presents a strategy to tailor soy protein-derived amyloid fibrils (SAFs) into hydrogels using (-)-epigallocatechin-3-gallate (EGCG). EGCG can cleave SAFs and induce the formation of branched chains, leading to gel-like structures. SAFs-EGCG complexes show superior antibacterial activity and are non-toxic to human cells.

Heat accelerates degradation of β-lactoglobulin fibrils at neutral pH

Summary: This study evaluated the degradation of neutralized beta-lactoglobulin fibrils under different temperatures and found that heating at 100 degrees C and 121 degrees C facilitated the degradation and depolymerization of the fibrils. Various techniques such as microscopy, scattering, spectroscopy, and rheology were used to analyze the changes in fibril morphology, structure, and viscosity. The findings suggest that heating temperature and time play a significant role in the aggregation and degradation of beta-lactoglobulin fibrils.

The role of water in the primary nucleation of protein amyloid aggregation

Summary: Water plays a key role in modulating the transition free energy of amyloid nucleation, governing the initiation of the process, and dictating the type of preferred primary nucleation and the type of amyloid polymorph generated. The initiation of amyloid aggregation likely results from a synergistic effect between protein intermolecular interactions and the properties of the water hydration layer of the protein surface. Primary nucleation can occur very rapidly in the bulk of the solution under conditions of poor water activity, leading to the generation of structurally distinct amyloid polymorphs.

Influence of hydrophobic interfaces and shear on ovalbumin amyloid-like fibril formation in oil-in-water emulsions
