Development of a novel functional yogurt rich in lycopene by Bacillus subtilis

Summary: In this study, carotenoid genes for lycopene synthesis were introduced into probiotic Bacillus subtilis to produce lycopene-rich yogurt. The developed yogurt not only had desirable physiochemical characteristics compared with plain yogurt, but also exhibited significantly high antioxidant capacity. This study offers a new and facile clue to enrich bioactive lycopene and probiotic Bacillus subtilis in yogurt for healthy and nutritional food development.

Incorporating Isabel grape preparation and derived by-product flour into probiotic goat milk yogurt resulted in a product with multifunctional characteristics and enhanced sensory qualities.

Summary: This study evaluated the antioxidant capacity, bioaccessibility, and bioavailability of 12 soy isoflavones (SIs). The results showed that SIs were stable under gastric digestion conditions but unstable under small intestinal digestion conditions for acetyl and malonyl conjugates. SI aglycones had higher permeability and cellular accumulation than their glucosides. A small amount of intact SI conjugates were found in the cell and in the basolateral side of each Transwell.

These compounds can be reduced through heating, structural modifiers, fermentation, and optimization of the fermentation process. Soaking, grinding, and heating of soybeans are effective methods for inactivating anti-nutritional factors. Additionally, other treatments like high hydrostatic pressure and irradiation can also help in reducing harmful compounds.
