Potential of essential oils for protection of Couscous against Aspergillus flavus and aflatoxin B1 contamination

Summary: This study evaluated the antifungal, antiaflatoxin, and antioxidant potential of Mentha pulegium, Myrtus communis, and Mentha piperita essential oils. The oils showed efficacy as a couscous preservative and inhibited aflatoxin production. Despite being a known hazard in coffee, the risk assessment for OTA in coffee indicates that no preventive controls are warranted for US coffee manufactures due to low risk severity and likelihood.

Antifungal and Antitoxigenic Effects of Selected Essential Oils in Vapors on Green Coffee Beans with Impact on Consumer Acceptability

Summary: This study evaluated the effects of different essential oil vapors on the growth, sporulation, and mycotoxins production of two Aspergillus strains in green and roasted coffee beans, as well as their impact on sensory profile of coffee samples. Results showed that almond, cinnamon bark, lemongrass, and litsea essential oils significantly inhibited fungal growth and mycotoxin production. Additionally, sensory evaluation revealed that some essential oils did not affect the taste and aroma of coffee beverages, making almond and cinnamon essential oils potential candidates for protecting coffee from toxigenic fungi during transport and storage.

Essential oils and their nanoformulations as green preservatives to boost food safety against mycotoxin contamination of food commodities: a review

Summary: The review extensively discusses the application of essential oils (EOs) and their nanoformulated products as novel green preservatives against foodborne molds and mycotoxin-induced deterioration of stored food commodities. While essential oils are considered promising alternatives to synthetic preservatives, their practical application faces challenges, which nanotechnology is emerging as a novel technology to overcome. Nanoencapsulation of EOs is currently being practiced to improve the stability and bioactivity of natural products, providing a potential solution for the challenges associated with EO application.
