Unravelling the nutritional and health benefits of wheat bread enriched with meat powder from laying hen fed diet with insect (Hermetia illucens) meal

Nutritional quality of meat from hen fed diet with full-fat black soldier fly (Hermetia illucens) larvae meal as a substitute to fish meal

Summary: The global utilization of insect protein in poultry feed is increasing. However, there is limited research on the nutritional quality of meat from hens fed a diet with black soldier fly larvae meal (BSFLM) as a substitute for fishmeal (FM). Our results show that substituting feed did not affect the composition of the meat products. Omega 3 fatty acids were not affected, while total monounsaturated fatty acids increased with increasing dietary inclusion of BSFLM. Lysine, methionine, and isoleucine were significantly higher in insect-fed hen meat products. Zinc and B vitamins, except for B1, were also enhanced in the meat from hens fed a BSFLM diet. Therefore, replacing up to 75% of FM with BSFLM did not significantly impact the meat quality. Meat from hens fed a BSFLM diet could be a promising and novel ingredient for manufacturing nutritious food products with a healthy appeal for consumers.

Lupin (Lupinus spp.)-Fortified Bread: A Sustainable, Nutritionally, Functionally, and Technologically Valuable Solution for Bakery

Summary: This study evaluated the effects of replacing wheat flour with different levels of lupin flour on the nutrition, physicochemical properties, and sensory attributes of dough and bread. The results showed that adding lupin flour improved the nutritional properties of the bread and increased the content of functional indicators. The substitution ratio of lupin flour also had an impact on the volume, porosity, and elasticity of the bread. According to sensory analysis, the bread with 10% lupin flour obtained the highest acceptability scores.

Whole Wheat Bread Enriched with Cricket Powder as an Alternative Protein

Summary: This study aimed to enrich protein content and indispensable amino acids in whole wheat bread by using cricket powder and investigated their physico-chemical properties, consumers' acceptance, and shelf-life. The results showed that bread enriched with cricket powder had higher protein and ash content, darker crumb color, and harder texture compared to the control bread. The bread enriched with 20% cricket powder had the best consumers' acceptance score and contained high levels of indispensable amino acids. Therefore, cricket powder could be a novel alternative protein source for enhancing the nutritional value of whole wheat bread.

Summary: The study found that incorporating Pseudophycis bachus powder improved the nutritional and antioxidant properties of fortified bread, reducing the glycemic index. Bread fortified with CFP showed increased protein digestibility and quality, as well as higher total phenolic content and antioxidant capacity. Therefore, enriching bread with CFP may be a significant alternative for the food industry to provide nutritionally enriched bread.
