Christine M. Sauer et al.

Summary: Contrary to common belief, processed food has become prevalent not only in urban middle-class households but also in rural areas and among the urban and rural poor in Tanzania. Ultra-processed food and meals away from home are emerging as significant components of the diet in both urban and rural areas, raising concerns about their health implications. The increase in processed food consumption is primarily driven by the opportunity costs of time for women and men, as well as environmental factors influencing food choices, indicating a continuing growth in processed food consumption.
