Outstanding Freeze-Thaw Stability of Mayonnaise Stabilized Solely by a Heated Soy Protein Isolate

Summary: There is a growing interest in the development of cholesterol-free mayonnaise. A study found that heated soy protein isolate can act as an effective stabilizer for high-internphase emulsions with excellent freeze-thaw stability. Such emulsions can be stabilized at low protein concentrations, and increasing the concentration further strengthens the gel network.

pH-Responsive Pickering high internal phase emulsions stabilized by Waterborne polyurethane

Summary: Waterborne polyurethane (WPU) nanoparticles were used to prepare high internal phase emulsions (HIPEs) with tailored morphology and excellent pH-responsiveness. The WPU-stabilized emulsions exhibited high stability, shear sensitivity, and excellent thixotropic recovery. They showed potential applications in oil transportation and recovery, emulsion polymerization, and heterogeneous catalysis.

The results showed that the combination of phycocyanin and gelatin improved the stability and extrudability of HIPEs, and enabled high printing definition and shape retention in 3D printing. This research provides important insights for developing customized three-dimensional food with functional thixotropic emulsions.

Evaluation of the adsorption capacity and mechanism of soy protein isolate for volatile flavor compounds: Role of different oxygen-containing functional groups

Summary: This study investigated the mechanism of soy protein isolate (SPI) adsorbing isomers of volatile flavor compounds (VFCs) and found that aldehyde group has the strongest interaction and binding capacity to SPI. Fluorescence analysis and double logarithmic Stern-Volmer experiment confirmed the formation of SPI-VFCs complex. Molecular docking results revealed more hydrogen bonds between octanal and SPI.

Controlled flavor release from high internal phase emulsions as fat mimetics based on glycyrrhizic acid and phytosterol

Summary: In this study, high internal phase emulsions (HIPE) with tunable flavor release were prepared as fat mimetics for meat alternatives. The research found that higher concentrations of glycyrrhizic acid (GA) and phytosterol in HIPE can improve the microstructural and rheological properties and regulate the release of meat volatiles. These fat mimetics with unique microstructure have potential applications in meat alternatives.

Summary: This study utilized high internal phase Pickering emulsions stabilized by protein-polysaccharide complexes as inks for food-grade three-dimensional printing (3DP), showing outstanding biphasic wettability and interfacial tension reduction. By tuning the properties of the complexes, the HIPPEs exhibited controllable injectability and printability during 3DP, with RCs stabilized HIPPEs showing favorable printing resolution, hardness, adhesiveness, and chewiness.

Preparation of high thermal stability gelatin emulsion and its application in 3D printing

Summary: Gelatin crosslinked by Transglutaminase was used to stabilize food-grade high internal phase emulsions (HIPEs) in a one-step method, resulting in uniform droplet diameter and good storage stability. The thermal and rheological properties of the HIPEs were enhanced with TG crosslinking, showing potential for 3D printing applications. This study provides an industrialized method for gelatin-based HIPEs with high thermal stability and theoretical guidance for practical applications.

Limonene-in-water Pickering emulsion and on-demand separation using thermo-responsive biodegradable nanoparticles

Summary: In this work, stable limonene-in-water Pickering emulsions were successfully produced by synthesizing biodegradable nanoparticles through a combination of polymerization techniques. The size of the oil phase and wetting properties of limonene could be strictly controlled by tuning the physico-chemical properties of the nanoparticles. The adoption of thermo-responsive polymer chains within the emulsifiers allowed on-demand destabilization of the emulsions for selective dispensing of limonene by increasing the temperature.
