Identification of a novel a-glucosidase inhibitor from Melastoma dodecandrum Lour. fruits and its effect on regulating postprandial blood glucose

Summary: Melastoma dodecandrum Lour. (MDL) extracts contain various polyphenolic compounds, including anthocyanins and proanthocyanidin derivatives. These extracts effectively reduce postprandial blood glucose concentrations and the most potent α-glucosidase inhibitor identified was casuarictin. Casuarictin competitively binds to α-glucosidase, occupying the catalytic site and forming strong hydrogen bonds with the enzyme residues. These findings suggest that casuarictin derived from MDL fruits could be used as a novel α-glucosidase inhibitor in functional foods or dietary products.

Formulation of plant-based yoghurt from soybean and quinoa and evaluation of physicochemical, rheological, sensory and functional properties

Summary: The aim of this study was to develop a novel plant-based yoghurt with high sensory acceptance and nutrition value. Soybean and quinoa were used as substrates, and fermentation improved the proximate composition, growth of LAB, water holding capacity, and antioxidant capacities of the yoghurt. The ratio of quinoa against soybean at 8:2 and 2:8 presented the best formulations based on sensory and function evaluation.

Enhancement of isoflavone aglycone, amino acid, and CLA contents in fermented soybean yogurts using different strains: Screening of antioxidant and digestive enzyme inhibition properties

Summary: This study evaluated the changes in isoflavone, amino acid, CLA, antioxidant effect, and digestive enzyme inhibition during fermentation of soy-milk to soy-yogurt with L. brevis and L. plantarum. The results showed reduction in isoflavone content, significant increase in amino acids and ornithine, variability in CLA levels, and elevated antioxidant abilities. Additionally, soy yogurt using mixed strains exhibited the greatest enzymatic inhibition and antioxidant capacities.

The peptides showed antioxidant, DNA damage protection, ACE-inhibitory, and antibacterial activities. The total gastrointestinal phase hydrolysate displayed stronger DNA damage protection and antibacterial activity against Escherichia coli.

Effect of the oat β-glucan on the development of functional quinoa (Chenopodium quinoa wild) milk
