Effect of Temperature and Storage Time on Some Biochemical Compounds from the Kernel of Some Walnut Cultivars Grown in Romania

Summary: The effects of temperature and storage time on some biochemical compounds from walnut kernels were studied. Phenolic and carotenoid compounds showed different trends during short-term and medium-term storage, with a reduction in concentration during long-term storage. Freezing was the most effective method for preserving phenolic compounds, while keeping the kernels at room temperature minimized the decrease in carotenoid content. Storage at -20 to -18 ? could extend the preservation of phenolic compounds for five months, while a shorter period (but longer than three months) was recommended for storage at 3-4 ?. None of the preservation methods were suitable for preventing carotenoid losses.

Acceleration of lipid oxidation in raw stored almond kernels in response to postharvest moisture exposure

Summary: The study revealed that drying almonds exposed to <=8% moisture results in higher levels of lipid oxidation during storage, with almonds treated in this way showing 1.4 times higher free fatty acid values and 3.5 times higher peroxide values compared to the control group after 12 months of accelerated storage. Additionally, these almonds also exhibited higher levels of headspace volatile compounds related to lipid oxidation throughout the storage period.

Phenolic extracts from colored-walnut pellicles: antioxidant efficiency in walnut oil preservation

Summary: The phenolic extracts from different colored walnut pellicles were compared, revealing that the red pellicle variety had the highest content of total phenolics and condensed tannins, while the purple pellicle variety had the highest content of flavonoids. The phenolic extracts from colored walnut pellicles showed a higher free radical scavenging ability compared to a synthetic antioxidant. These extracts were also found to be effective in preserving walnut oil, as they reduced the peroxide and aldehyde content, preventing flavor deterioration.
