Advanced approaches for improving bioavailability and controlled release of anthocyanins

Formulation of Gels and Emulgels with Malus domestica Borkh: Apple Extracts and Their Biopharmaceutical Evaluation In Vitro

Summary: This study formulated gels and emulgels containing phenolic compounds of apple extracts and evaluated their antioxidant activity in vitro. The release of phenolic compounds was higher in emulgel formulations compared to gel formulations. The highest release was observed in emulgel E5 formulation and the lowest release was observed in gel formulations G3 and G5. All gel and emulgel formulations showed the strongest antioxidant activity after 6 hours.

Compound hydrogels derived from gelatin and gellan gum regulates the release of anthocyanins in simulated digestion

Summary: In this study, the encapsulation of anthocyanins with Gelatin/Gellan gum was investigated to protect anthocyanins from degradation in the stomach and enhance their release in the small intestine. The results showed that Gelatin/Gellan gum = 8/2 had the most compact and stable structure, and the compound hydrogels did not inhibit the proliferation of normal rat intestinal epithelial cells (IEC-6), indicating the effectiveness and safety of this method.

Computational design of a chitosan derivative for improving the color stability of anthocyanins: Theoretical calculation and experimental verification

Summary: The objective of this study was to design a chitosan derivative that can effectively protect anthocyanins from degradation during accelerated storage. The interaction between 12 organic acids and anthocyanins was evaluated, and sinapic acid was selected to synthesize sinapic acid-grafted chitosan. The experimental results showed that sinapic acid-grafted chitosan improved the color stability of black rice anthocyanins under accelerated storage conditions, and formed more hydrogen bonds with anthocyanins compared to chitosan.
