Salinity enhances high optically active L-lactate production from co-fermentation of food waste and waste activated sludge: Unveiling the response of microbial community shift and functional profiling

Summary: This study proposed an efficient approach using salt as an additive to increase lactic acid (LA) production, with optical pure L-lactate obtained at 30 g NaCl/L. High salinity conditions altered the common conversion of LA to volatile fatty acids, and selectively enriched key LA bacteria genera under saline conditions. Strong correlations between salinity and functional genes for L-LA production were observed.

High-pressure microfluidization of sugarcane juice: Effect on total phenols, total flavonoids, antioxidant activity, and microbiological quality

Summary: The study found that microfluidization significantly reduces the levels of phenolic compounds and flavonoids in sugarcane juice, as well as decreasing its antioxidant capacity and metal ion chelating activity. Under the conditions of 100-150 MPa pressure with three processing cycles, microfluidization can help sugarcane juice retain higher levels of polyphenols and antioxidants.
