Non-Saccharomyces Yeast Strains, Aromatic Compounds and Sensory Analysis of Italy and Negra Criolla Pisco from the Moquegua Region of Peru

Identification, quantitation and organoleptic contributions of furan compounds in brandy

Summary: In this study, three different extraction methods combined with comprehensive two-dimensional gas chromatography and time-of-flight mass spectrometry were employed to identify and quantify furan compounds in brandy. Liquid-liquid extraction using dichloromethane was found to be the optimal method. A total of 21 furan compounds were identified, including 5 that were detected in brandy for the first time. Quantitative results showed a positive correlation between furan compound content and aging time. Certain furan compounds with high odor activity values were found to significantly impact the sensory characteristics of brandy. These findings provide a new perspective on the sensory and chemical characteristics of brandy.

Metschnikowia pulcherrima as biocontrol agent and wine aroma enhancer in combination with a native Saccharomyces cerevisiae

Summary: One of the objectives of sustainable winemaking is to reduce the use of sulfur dioxide. In this study, non-Saccharomyces wine yeasts were used as biocontrol agents in different steps of wine production, showing an effective reduction of wild yeasts when Metschnikowia pulcherrima was inoculated during the cold clarification stage and subsequent fermentation. The combination of M. pulcherrima and native Saccharomyces cerevisiae strains resulted in wines with enhanced aromatic profiles and the presence of volatile thiols.

Describing the Sensory Complexity of Italian Wines: Application of the Rate-All-That-Apply (RATA) Method

Summary: The Rate-All-That-Apply method (RATA) with semi-trained judges was used to characterize a large and heterogeneous Italian wine sample. The judges showed high repeatability and good panel reliability. The multi-factor analysis revealed the discriminatory ability of the panel, with red wines described by bitterness, astringency, body, alcohol, and specific olfactory stimuli, while white wines were described by saltiness, sourness, and citrus, tropical fruits, and white flowers odors. The RATA method is a suitable and reliable alternative to gather information about the sensory perception of wines, even with limited availability of consumer panels.

Investigation of non-Saccharomyces yeasts with intracellular β-glycosidase activity for wine aroma modification
