Aroma Profiles of Vitis vinifera L. cv. Gewurztraminer Must Fermented with Co-Cultures of Saccharomyces cerevisiae and Seven Hanseniaspora spp.

Summary: In this study, the aroma-production profiles of seven different Hanseniaspora strains were determined in a simultaneous co-inoculation with Saccharomyces cerevisiae. The co-inoculated fermentations showed a significant increase in ethyl acetate levels, except for two strains that belonged to the slow-evolving clade. Other observations included depletion of lactic acid with H. osmophila, high production of isoamyl acetate with H. guilliermondii, lower levels of glycerol with H. occidentalis, and an increase in certain terpenols with H. opuntiae. This work allows for the direct comparison of wines made with different Hanseniapora spp., highlighting their oenological potential.
