Monitoring and evaluation of free acidity levels in Talh honey originated from Talh tree Acacia gerrardii Benth

Hael S. A. Raweh et al.

Summary: Talh honey, originating from the Acacia gerrardii Benth. trees, is known for its high levels of free acidity. The study found that the free acidity increased gradually from the leaves and flowers to the honey stomach and ripe honey. pH levels decreased while electrical conductivity increased during honey production. Seasonal variations in free acidity, pH, and electrical conductivity were observed, indicating fluctuations over time. The high free acidity in Talh honey was related to the plant's nature rather than honey quality, suggesting the need for modification in honey standards based on regional characteristics.
