The aroma analysis of asparagus tea processed from different parts of green asparagus (Asparagus officinalis L.)

Junxiu Xue et al.

Summary: In this study, asparagus spears were processed into tea, with the mid part of the spear being the most popular among consumers. The different aroma components in the three asparagus teas were speculated to be influenced by the different spear parts, suggesting a potential market for mid asparagus tea.

Steering the formation of cellobiose and oligosaccharides during enzymatic hydrolysis of asparagus fibre

Joanne W. Siccama et al.

Summary: This study proposed the enzymatic conversion of cellulosic-rich waste streams of white asparagus into cellobiose and cello-oligosaccharides (COS) for producing a natural carrier agent. By optimizing the enzyme loadings, hydrolysis times, and pre-treatment conditions, a high yield/purity enzymatic hydrolysate with a high glass transition temperature (T-g) was obtained. The spray-dried hydrolysates of asparagus fiber showed potential usage as a carrier agent due to their high T-g.

Investigating the role of abscisic acid and its catabolites on senescence processes in green asparagus under controlled atmosphere (CA) storage regimes

Maria Anastasiadi et al.

Summary: This study investigated the correlation between ABA and ABA catabolites and senescence in asparagus stored under different controlled atmosphere (CA) conditions. The results showed that ABA and its catabolites were associated with accelerated senescence processes in asparagus. The study also found that CA conditions can delay asparagus senescence by regulating ABA biosynthetic and catabolic pathways.

Investigation of sulfur-containing compounds in spears of green and white Asparagus officinalis through LC-MS and HS-GC-MS

Elena Bergamasco et al.

Summary: This study provides a comprehensive characterization of sulfur-containing metabolites in asparagus using LC-MS and GC-MS. 80 S-containing compounds were identified and their distribution in different parts of the spears was assessed. The identified compounds are considered to contribute to the taste and odor properties of green and white asparagus.

Effect of Heat Treatment on Nutritional and Chromatic Properties of Mung Bean (Vigna radiata L.)

Ping-Hsiu Huang et al.

Summary: This study investigated the chromatic changes in mung beans during heat processing and found that chlorophyll decreased while tawny pheophytin and yellowness increased in the seed coat. The total flavonoid content also showed an increasing trend. The reaction between flavonoids and other polyphenolic compounds resulted in a significant decrease in brightness of the cooking solution.

Hemicellulose-based nanocomposites coating delays lignification of green asparagus by introducing AKD as a hydrophobic modifier

Zeshan Tian et al.

Summary: The study developed a coating containing hemicellulose, cellulose nanofibers, and montmorillonite to prolong the shelf life of green asparagus, while using alkyl ketene dimer to enhance structural stability and respiratory barrier properties of the film. This approach effectively reduced respiration rate and lignification-involved enzyme secretion in green asparagus.
