Structure and functionality of cassava starch in different deep eutectic solvents/water mixtures: A comparative study

Summary: This study investigated the solubility of cassava starch in different types of deep eutectic solvents (DESs) and found that acidic DESs had higher solubility. The results also showed that the dissolution behavior of starch in DESs/water mixtures was affected by the solvent structure and water content.

Normal cereal starches are easily affected, pea starch is destructed within 6 hours, while high-amylose maize starch and others with dense outer layers are more resistant.

Wet Ball Milling of Indica Rice Starch Effectively Modifies Its Multilevel Structures and Pasting Behavior

Summary: While the changes in starch physicochemical properties resulting from typical dry ball milling have been widely studied, this work investigates the effect of wet ball milling on the multiscale structures and pasting behavior of indica rice starch. Results show that wet ball milling can effectively modify rice starch structure and properties, with even 15 minutes of ball milling causing significant changes in particle size, crystallinity, and pasting behavior.
