Evaluation of Antimicrobial Resistance Profiles of Bacteria Isolated from Biofilm in Meat Processing Units

Transition of microbial contamination on the surface of carcass during the cattle slaughter process

Summary: In this study, we investigated the progression of microbial contamination on carcass surfaces during the slaughter process. Cattle carcasses were tracked and swabbed at different steps and locations to analyze bacterial contamination. The results showed that the outer surface had higher bacterial counts than the inner surface, and the counts gradually decreased along the process. Various detrimental bacterial groups were detected, including those that can grow in the package during cold distribution. The study highlights the importance of the skinning process in microbial contamination and provides information on the dynamics of contamination in cattle slaughter.

Pseudomonas species prevalence, protein analysis, and antibiotic resistance: an evolving public health challenge

CTX-M-producing Escherichia coli strains: resistance to temocillin, fosfomycin, nitrofurantoin and biofilm formation
