Impact of Coreopsis tinctoria Nutt. Essential oil microcapsules on the formation of biogenic amines and quality of smoked horsemeat sausage during ripening

Summary: The present study showed that Coreopsis tinctoria Nutt. essential oil (CEO) and its microcapsules (CEOM) effectively inhibited the accumulation of biogenic amines (BAs) and improved the quality of smoked horsemeat sausage. CEOM was found to be a more effective way to maintain color and delay the deterioration of sensory quality in sausages.

Effect of gelatin and acacia gum on anthocyanin coacervated microcapsules using double emulsion and its characterization

Summary: The aim of this study was to develop a stable microencapsulated anthocyanin using double emulsion complex coacervation technique from black rice bran. Nine microcapsule formulations were prepared using gelatin, acacia gum, and anthocyanin at different ratios and concentrations. The obtained microcapsules were evaluated for their physicochemical properties, morphology, spectroscopy, thermal behavior, and stability. The results showed high encapsulation efficiency and stable properties of the microcapsules, indicating their potential as a source for stable nutraceuticals.

Preparation and application of cinnamon-Litsea cubeba compound essential oil microcapsules for peanut kernel postharvest storage

Summary: This research developed a new, efficient, and safe antimildew for postharvest storage of peanut kernels. The antimildew, cinnamon-Litsea cubeba compound essential oil (CLCEO) microcapsule (CLCEOM), was synthesized using CLCEO as the core material and beta-cyclodextrin as the wall material. The experiments showed that CLCEOM had significant antifungal effects on Aspergillus spp. strains even after 2 months of storage at 4 degrees Celsius. It also reduced the number of fungal colonies, the abundance of Aspergillus spp., and aflatoxin B1 content in peanut kernels, and had positive effects on slowing down the increase in acid value of peanut oil without causing any adverse effects on viability and sensory properties during storage.
