Rheo-fermentation properties of bread dough with different gluten contents processed by 3D printing

Qian Jiang et al.

Summary: This study aims to predict the rheological properties of dough by using rheo-fermentation properties, providing indirect information on both 3D printing properties and post-processing characteristics. The results suggest that a gluten content of 13% is most suitable for 3D printing and exhibits desirable performance during fermentation and baking.

Preparation, Structure, and Properties of Enzymatically-Hydrolyzed Starch for Slowing Down the Retrogradation of High Starchy Foods

Jiating Xie et al.

Summary: Amylase can be used to inhibit retrogradation of starch and high starchy foods. The study shows that enzymatically-hydrolyzed glutinous rice starch (EGS) slows down the retrogradation of rice cakes, with the effect depending on the type of amylase and DE value. Differences in structure and physicochemical properties of EGS hydrolyzed by different amylases influence their anti-retrogradation effects.

Regulation of Amylose Content by Single Mutations at an Active Site in the Wx-B1 Gene in a Tetraploid Wheat Mutant

Yulong Li et al.

Summary: This study reports a novel mechanism underlying the deletion of the Wx-1 gene in wheat. Through the analysis of a mutant line, it was found that a single amino acid mutation can impair the activity of the Wx-B1 protein and affect starch synthesis. These findings provide new insights into the inactivation of the waxy gene and demonstrate the possibility of fine regulation of wheat amylose content by modifying the activity of granule-bound starch synthase I.

Summary: High-protein rice has inferior taste attributes compared to low-protein rice. This study found that the interaction between protein and amylose affects the gelatinization and retrogradation properties of rice flour. High-amylase rice flour increased certain parameters, while protein addition decreased some parameters.

Value of Wholegrain Rice in a Healthy Human Nutrition

Marina Carcea

Summary: Brown rice, as a wholegrain cereal, has beneficial effects on human health by reducing the risk of metabolic disorders, cardiovascular diseases, and certain types of cancer. Despite its health benefits, white rice is preferred due to reasons such as appearance, taste, palatability, ease of cooking, and tradition.

Evaluation of starch retrogradation by infrared spectroscopy

Hao Lu et al.

Summary: The study investigated the retrogradation process of starch using Fourier transform infrared spectrometer (FTIR), finding that the ratio of 1047 cm(-1)/1022 cm(-1) increased with storage time and was related to hydrogen bonds. FTIR results were consistent with those from differential scanning calorimetry, with distances of hydrogen bonds decreasing during retrogradation.

Summary: Sourdoughs fermented by lactobacilli have the potential to produce gluten-free maize bread with acceptable technological properties, nutritional quality, and longer shelf life. The quality of sourdough maize bread can be controlled by adding different lactobacilli species to the formulation, with L. brevis being a key factor in determining the quality.

Digestibility and structure changes of rice starch following co-fermentation of yeast and Lactobacillus strains

Yuan Tu et al.

Summary: Fermentation of rice with different amounts of starter cultures significantly affects the structures and digestibility of rice starch. Using a lower amount of starter cultures results in starch degradation and a slight reassembly, leading to increased content of slowly digestible starch (SDS). On the other hand, increasing the amount of starter cultures during fermentation produces more starch fractions with ordered multi-scale structures, including double helical and short range-ordered structures, ultimately increasing SDS content of fermented starchy foods.
