Innovative Strategy for Aroma Stabilization Using Green Solvents: Supercritical CO2 Extracts of Satureja montana Dispersed in Deep Eutectic Solvents

Summary: The aim of this study was to investigate the potential of natural deep eutectic solvents (NADES) for stabilizing aroma volatile organic compounds from Satureja montana. The lipophilic fraction of S. montana was extracted using supercritical CO2 and then dispersed directly in NADES based on betaine and glycerol. The stability of the components in NADES was analyzed over 6 months of storage at room temperature, and it was found that the NADES had a stabilizing effect on the volatile compounds. The most efficient stability was achieved using betaine/ethylene glycol, glycerol/glucose, and betaine/sorbitol/water, providing a sustainable approach for obtaining stable S. montana extracts.

Summary: Quinic acid, a cyclohexanecarboxylic acid found in medicinal plants, possesses various biological activities such as antioxidant, antidiabetic, anticancer, and antimicrobial effects. It exhibits antibacterial properties through modulation of ribosome functions, alterations in lipid and fatty acid levels, and disruption of oxidative phosphorylation. The antidiabetic effect is achieved by stimulating insulin secretion and the anticancer effect involves apoptosis promotion and downregulation of MMP-9 expression via inhibition of AP-1 and certain signaling pathways.

Additionally, arithmetic models can estimate critical properties, and hydrophobic DESs have been proven as capable of dissolving natural varnishes.
