Formation and Control of Biogenic Amines in Sufu-A Traditional Chinese Fermented Soybean Product: A Critical Review

Summary: This paper presents an overview of the relationships between the biogenic amines (BAs) of sufu and its processing and storage conditions. The study suggests that the use of selected microorganisms as starters, addition of NaCl and alcohol, and lowering storage temperature and time are effective measures to control the formation of BAs. For industrial sufu products, the use of additives represents a viable alternative for the control of BAs.

Effects of Jiuqu inoculating Rhizopus oryzae Q303 and Saccharomyces cerevisiae on chemical components and microbiota during black glutinous rice wine fermentation

Summary: This study investigated the physicochemical properties, metabolites, sensory characteristics, and microbiota of black glutinous rice wine (BGRW) during traditional fermentation (TF) and inoculated fermentation (IF), revealing their correlation relationships. Results showed that IF promoted total sugar utilization and synthesis of ethanol and esters in BGRW. Moreover, the concentrations of ethanol, esters, and total flavor in IF were comparable to those in TF after a shorter fermentation time. Sensory evaluation confirmed the improved quality of BGRW through IF. Additionally, TF contained pathogenic and spoilage microorganisms, whereas IF inhibited their growth. Pearson's correlation analysis identified the pivotal functional microorganisms in BGRW. This study provided a scientific basis for enhancing the quality, shortening the fermentation cycle, and controlling pathogenic and spoilage organisms in BGRW.

Survey of the biogenic amines in craft beer from the Chinese market and the analysis of the formation regularity during beer fermentation

Summary: This study evaluated the levels of eight biogenic amines in 59 craft beers of five styles and monitored the changes during beer fermentation. The results showed that putrescine and tryptamine were the most abundant, and dark beer had the highest total biogenic amine content due to considerable tryptamine accumulation. The study also found that the total biogenic amine level increased gradually during the segmental saccharification and main fermentation stages.

These findings highlight the multifunctionality of low-temperature Daqu and its potential in improving liquor fermentation.

Metagenomic features of traditional fermented milk products

The production-scale huangjiu fermentation showed that jiangnan1# strain decreased higher alcohols (HAs) by 24.99% and increased acetate esters (AEs) by 36.35%. Sensory evaluation revealed that jiangnan1# huangjiu had a higher fruity aroma intensity compared to 85# huangjiu, which had higher acidity and honey aroma intensity.

Effects of the microbial community on the formation of volatile compounds and biogenic amines during the traditional brewing of Hongqu rice wine

Comparison of the Fermentation Activities and Volatile Flavor Profiles of Chinese Rice Wine Fermented Using an Artificial Starter, a Traditional JIUYAO and a Commercial Starter

The study found that the ethanol content of the CRW samples was similar across the three fermentation methods, but the total acid content varied. Electronic nose analysis showed similarities in olfactory fingerprints between CRW samples fermented with JIUYAO and the artificial starter, with differences in flavor profiles determined by gas chromatography-mass spectrometry.
