Vitamin D Content in Commonly Consumed Mushrooms in Thailand and Its True Retention after Household Cooking

Summary: This study examined the vitamin D level of cultivated and wild mushrooms commonly consumed in Thailand, as well as the effect of cooking on their vitamin D content. The results showed that lung oyster mushroom and termite mushroom had high levels of vitamin D2, while other mushrooms had lower amounts. Different cooking methods did not significantly affect the retention of vitamin D2. It is recommended to consume cooked lung oyster mushrooms and get regular sunlight exposure to prevent vitamin D deficiency.
