Study of soybean protein isolate-tannic acid non-covalent complexes by multi-spectroscopic analysis, molecular docking, and interfacial adsorption kinetics

Summary: Non-covalent complexes of soybean protein isolate (SPI) and tannic acid (TA) were prepared in this study, and the interaction between SPI and TA was investigated using multiple methods such as multi-spectroscopy and molecular docking techniques. The non-covalent binding of TA to SPI led to a decrease in alpha-helix and beta-sheet contents, as well as a reduction in fluorescence intensity. The interaction between SPI and TA was mainly governed by hydrogen bonding, as determined by fluorescence-quenching mechanism and molecular docking analysis. The findings help in understanding the mechanism of non-covalent binding of SPI with TA and promote the application of protein-polyphenol complexes in emulsions.

Extension Region Domain of Soybean 7S Globulin Contributes to Serum Triglyceride-Lowering Effect via Modulation of Bile Acids Homeostasis

Summary: In this study, it is found that the extension region (ER) of soybean 7S globulin plays a major role in lowering serum triglyceride (TG) levels. Oral administration of ER peptides significantly affects the metabolic profiling of serum bile acids (BAs) and increases the fecal excretion of total BAs. Furthermore, ER peptides supplementation influences the composition of gut microbiota and the gut microbiota-dependent biotransformation of BAs, leading to increased secondary BAs concentration in fecal samples. Overall, this study highlights the potential of ER peptides as a candidate pharmaceutical for the treatment of dyslipidemia.

Different interactions driving the binding of soy proteins (7S/11S) and flavonoids (quercetin/rutin): Alterations in the conformational and functional properties of soy proteins

Summary: The purpose of this research was to compare the interactions between bioactive flavonoids (quercetin and rutin) and two predominant soy proteins (beta-conglycinin and glycinin), and the structural and functional properties of their complexes. The study found that the binding affinities of quercetin and rutin towards different soy proteins were structure-dependent. Both quercetin and rutin altered the protein's secondary structure and enhanced its antioxidant capacity.

Non-covalent interaction of soy protein isolate and catechin: Mechanism and effects on protein conformation

Summary: Understanding the interaction mechanism between proteins and polyphenols is crucial for the application of protein-polyphenol compounds in food. This study showed that non-covalent modification of soy protein isolate (SPI) with catechin resulted in aggregation and network-like structure formation. The increased catechin concentration caused SPI to become looser and more disordered, with an opened internal structure and exposed hydrophobic groups. The main forces between SPI and catechin were found to be hydrophobic interactions and hydrogen bonds.

Influence of structure complexity of phenolic compounds on their binding with maize starch

Summary: The influence of the structure complexity of phenolic compounds on their binding with maize starch was investigated. The computational results showed that protocatechuic acid, ellagic acid, naringin, and tannic acid could bind with maize starch through hydrogen bonds. The number and distribution of hydroxyl groups in phenolic compounds significantly affected the binding affinity and conformation with maize starch. Furthermore, the binding of phenolic compounds with larger molecular size and steric hindrance had a more obvious effect on the microstructure, particle size, crystallinity, and thermal stability of maize starch. Overall, the hydroxyl groups, molecular size, and steric hindrance of phenolic compounds could modify the structure and properties of maize starch to varying degrees.
