Impact of different kernel grades on volatile compounds profile, fatty acids and oxidative quality of cashew nut oil

The broken kernel oils showed similar or superior quality to the whole kernel oil, especially samples B3 and P3. The oils from less intact nuts showed high proportions of monounsaturated fatty acids and higher proportions of volatile compounds not derived from oxidation in sample P3. This study expands the possibility of valorizing lower commercial value cashew nuts by producing oil with adequate quality for consumption.

Comparative characterization of key odorants and aroma profiles of fragrant rapeseed oil under different roasting conditions

Summary: Fragrant rapeseed oil (FRO) is known for its characteristic aroma. This study identified and quantified the key aroma-active compounds in FRO and analyzed their correlation with roasting parameters. Dimethyl trisulfide and 4-isothiocyanato-1-butene were found to be the most important aroma-active compounds in FRO and their levels changed with roasting temperature and time. Based on sensory evaluation, specific time limits were recommended for different roasting temperatures to satisfy consumer preference.

Comparison of aroma active compounds in cold- and hot-pressed walnut oil by comprehensive two-dimensional gas chromatography-olfactory-mass spectrometry and headspace-gas chromatography-ion mobility spectrometry

Summary: The aroma composition of cold-pressed walnut oil (CWO) and hot-pressed walnut oil (HWO) was analyzed using comprehensive two-dimensional gas chromatography-olfactory-mass spectrometry (GC x GC-O-MS) and headspace-gas chromatography-ion mobility spectrometry (HS-GC-IMS). Various aroma-active compounds were identified in both oils, with different key compounds identified in each. The study also found that Maillard reaction and lipid oxidation played an important role in flavor formation in HWO. This study provides a guide to improving the quality of walnut oil based on its aroma characteristics.

Research on flavor characteristics of beef cooked in tomato sour soup by gas chromatography-ion mobility spectrometry and electronic nose

Summary: Tomato sour soup beef (TSSB) is a nutritious and flavorful dish made by cooking beef with tomato sour soup. The effect of cooking time on the flavor characteristics of TSSB was investigated using gas chromatography-ion mobility spectrometry (GC-IMS) and an electronic nose. The results showed that the relative contents of esters, alcohols, ketones, and acids increased in TSSB, while aldehydes decreased. Sensory analysis confirmed that TSSB had improved taste and flavor. Overall, cooking beef in TSS enhanced the flavor and sensory quality of the beef by altering the relative content of different flavor compounds.

Effects of High-Canolol Phenolic Extracts on Fragrant Rapeseed Oil Quality and Flavor Compounds during Frying

Summary: This study investigated the effect of high-canolol phenolic extracts (HCP) on the physicochemical properties and flavor of fragrant rapeseed oil (FRO) during frying. HCP significantly inhibited the increase in peroxide, acid, p-anisidine, and carbonyl values, as well as total polar compounds and degradation of unsaturated fatty acids. Sixteen volatile flavor compounds that significantly contributed to the overall flavor of FRO were identified. HCP was effective in reducing the generation of off-flavors and increasing the level of pleasant deep-fried flavors. The application of HCP has a positive effect on protecting the quality and prolonging the usability of FRO.

Characterization of volatile metabolites in Pu-erh teas with different storage years by combining GC-E-Nose, GC-MS, and GC-IMS

Summary: In this study, the changes in volatile profiles of Pu-erh teas with different storage years were investigated using GC-E-Nose, GC-MS, and GC-IMS. Discrimination of Pu-erh tea with different storage time was achieved by combining GC-E-Nose with PLS-DA. GC-MS and GC-IMS identified 43 and 91 volatile compounds respectively, and using PLS-DA based on the volatile fingerprints of GC-IMS allowed for satisfactory discrimination of Pu-erh teas.

Changes in volatile profiles of a refrigerated-reheated xylose-cysteine-lecithin reaction model analyzed by GCxGC-MS and E-nose

Summary: The contribution of refrigerating and reheating treatment to warmed-over flavor (WOF) was investigated using GCxGC-MS, SPME, and E-nose. The results showed that refrigerating increased the level of furfuryl mercaptan and decreased the levels of other compounds, while reheating caused changes in the levels of certain compounds. Refrigerating intensified the sulfur-like odor, while reheating alleviated the sulfur-like odor and increased the rancid-like odor.

Characterization of Key Odor-Active Off-Flavor Compounds in Aged Pasteurized Yogurt by Sensory-Directed Flavor Analysis

Summary: The purpose of this study was to determine the key odor-active compounds contributing to the off-flavor of aged pasteurized yogurt (APY) using sensory-directed flavor analysis. Different extraction methods were compared to determine their effects on the volatile compounds, and dynamic headspace sampling (DHS) was found to be suitable for this study. Comprehensive two-dimensional gas chromatography-olfactometry-mass spectrometry analysis (GC x GC-O-MS) was found to have more advantages in separating and identifying the volatile compounds. The results showed that 2-heptanone and hexanal were the most vital components in APY with the highest flavor dilution factor.

Roasting pretreatment of walnut (Juglans regia L.) kernels: improvement of the oil flavor profile and correlation with the chemical composition

Summary: This study investigated the role of roasting pretreatment in enhancing the flavor of walnut oil. A total of 71 volatile compounds, 35 odorants, and 17 aroma-active compounds were identified in walnut oil using different analytical techniques. The results showed that prolonged roasting pretreatment effectively increased the production of aldehydes and pyrazine aroma-active compounds in walnut oil. Pearson correlation analysis revealed the correlation between aroma-active compounds and chemical composition. This research provides valuable insights for the quality control of walnut oil flavor and its industrial applications.
