Umbu Fruit Peel as Source of Antioxidant, Antimicrobial and α-Amylase Inhibitor Compounds

Summary: This study optimized the extraction conditions for bioactive compounds from umbu fruit peel using thermal-assisted solid-liquid extraction, and evaluated the antioxidant, antimicrobial, and inhibitory effects of the optimized extract. The results showed that the optimal conditions for the extraction were a temperature of 74 degrees C, ethanol concentration of 37%, and a solid-liquid ratio of 1:38. The optimized extract exhibited strong antioxidant activity and antimicrobial effects against both Gram-positive and Gram-negative bacteria, as well as inhibitory activity against alpha-amylase. The bioactive profile of the optimized extract revealed that it mainly consisted of phenolic acids and flavonoids.

Tailoring the physicochemical properties of freeze-dried buriti oil microparticles by combining inulin and gum Arabic as encapsulation agents

Summary: This study evaluated the effect of biopolymers on the physicochemical properties of freeze-dried buriti oil microparticles. The addition of inulin significantly increased the moisture content and Aw values of the microparticles, while increasing the amount of wall material improved the solubility. This research provides a viable alternative for the application of freeze-dried buriti oil microparticles in hydrophilic foods.

Summary: The study evaluated the main characteristics of microparticles obtained from an extract of the Euterpe edulis co-product, as well as their stability during storage. Microparticles formulated using modified starch and maltodextrin showed good stability and retention of bioactive compounds.
