Botrytis cinerea induced phytonutrient degradation of strawberry puree: effects of combined preservation approaches with high hydrostatic pressure and synthetic or natural antifungal additives

Summary: This study evaluated the effects of high hydrostatic pressure (HHP) processing with potassium sorbate (PS) or avocado seed acetogenins (ASA) on the nutritional, microbiological, and physicochemical properties of strawberry puree inoculated with Botrytis cinerea. HHP-PS treated samples and no-preservative HHP-ASA purees had high total ascorbic acid (TAA) but viable conidia, which can induce further phytonutrient losses. HHP and antifungal additives maintained ellagic acid, increased pelargonidin-3-glucoside contents, and inactivated conidia, strengthening the value of combined non-thermal technologies for the preservation of strawberry puree.

Dynamic changes in flavonoids content during congou black tea processing

Summary: This study comprehensively characterized the dynamic changes of flavonoids during black tea processing using UPLC-MS/MS. It identified 203 flavonoids during the process, showing a significant increase in flavones, flavonols, and flavonoid polymers during withering, while over 80% of flavonoids decreased during fermentation. The hydrolysis of flavonoid glycosides mainly occurred during rolling, and the variation of flavonoids in the drying stage depended on their thermal stability.

Effect of High Hydrostatic Pressure and Pulsed Electric Fields Processes on Microbial Safety and Quality of Black/Red Raspberry Juice

Summary: This study investigated the effects of high hydrostatic pressure (HHP) and pulsed electric fields (PEF) on black/red raspberry juice. The results showed that HHP treatment had a significant inhibitory effect on molds and yeast, as well as increased pH, acidity, and total soluble solids (TSS) values. Partial inactivation of pectin methylesterase (PME) activity and increase in vitamin C and phenolic compounds (TPC) content were observed after HHP and PEF treatment. The study also discussed in detail the potential effects of HHP and PEF on microbial safety, enzyme inactivation, and phytochemical retention.

Factors such as food matrix, water content, the presence of dissolved substances, and pH value play significant roles in the inactivation of bacteria, viruses, and parasites by pressure. Data for food-relevant human virus types are currently missing, highlighting the need for further research in this area.
