High-pressure processing: Effect on textural properties of food- A review

Summary: The increasing demand for zero to minimally processed safe foods has led to the development of non-thermal processing technologies. Non-thermal pre-processing and processing have been found to be efficient in extending shelf life, improving product quality, and ensuring safety. High-pressure processing (HPP) is a non-thermal method that uses increased pressure to achieve shelf-stable products without affecting their nutritional and chemical composition. HPP can alter the texture of food products but has shown to improve textural attributes with minimal deterioration. This review critically examines the impact of HPP on texture changes in different types of food matrices.

Effects of Sous Vide Cooking on Physicochemical, Structural, and Microbiological Characteristics of Cuttlefish, Octopus, and Squid

Summary: This study investigated the physicochemical, color, textural, mineral content, fatty acid composition, and microbiological properties of raw and sous vide cooked cuttlefish, octopus, and squid. The results showed that sous vide cooking affected the pH, protein content, and color of the seafood, but had no significant impact on lipid oxidation. The texture of the sous vide cooked samples was softer compared to the raw samples. The cooking method also had positive effects on the microbial counts.
