Production of hydroxytyrosol rich extract from Olea europaea leaf with enhanced biological activity using immobilized enzyme reactors

Summary: This study developed and applied immobilized enzyme batch bioreactors for the chemo-enzymatic treatment of aqueous Olea europaea leaf extract. The modified extract showed increased enrichment in hydroxytyrosol and higher antioxidant, antibacterial, and cytotoxic activities compared to the non-modified extract. The biocatalyst demonstrated high hydrolytic stability and achieved high conversion yields of oleuropein during the modification process.

These amphipilic molecules possess a natural phenolic core and an attached aliphatic motif, allowing them to interact with various systems and potentially be used in processed foods, as drug carriers, antimicrobial agents, antioxidants in the cosmetic industry, and even in the treatment of degenerative diseases related to oxidative stress.

Olive Pomace Oil versus High Oleic Sunflower Oil and Sunflower Oil: A Comparative Study in Healthy and Cardiovascular Risk Humans

Enzymatic Synthesis of Lipophilic Esters of Phenolic Compounds, Evaluation of Their Antioxidant Activity and Effect on the Oxidative Stability of Selected Oils
