Quorum Sensing of Lactic Acid Bacteria: Progress and Insights

Xin Qian et al.

Summary: The presence of lactic acid bacteria (LAB) as probiotics in the harsh intestinal environment is usually temporary. Quorum sensing (QS), a form of bacterial communication based on signaling molecules, has gained attention for its important role in regulating LAB properties that support colonization in the intestines. QS is also involved in autolysis and bacteriocin production by LAB, which are essential processes for the application of these species as probiotics or starter cultures. This review discusses LAB's QS systems, the factors that may affect QS, the impact of QS on LAB's intestinal colonization, and the possible interactions mediated by QS between probiotics and the gut microbiome.

Metabolism of hydrogen peroxide by Lactobacillus plantarum NJAU-01: A proteomics study

Lei Chen et al.

Summary: This study investigated the time-course effect of Lactobacillus plantarum NJAU-01 in scavenging exogenous hydrogen peroxide (H2O2). The results showed that L. plantarum NJAU-01 was able to eliminate up to 4 mM H2O2 with a prolonged lag phase and recover during subsequent culture. The redox state and differential proteins indicated the involvement of biomolecules in H2O2 sensing, protein synthesis, repair systems, and metabolic processes.

LC-MS based metabolomics analysis of okara fermented by Bacillus subtilis DC-15: Insights into nutritional and functional profile

Qi Zhan et al.

Summary: Recent studies have shown the improved nutritional and functional status of fermented okara, but little is known about the changes in metabolites during fermentation and how they affect metabolic pathways. Through untargeted LC-MS metabolomics approach, we identified 761 differential metabolites in okara fermented by Bacillus subtilis DC-15, with high abundances in amino acids, dipeptides, fatty acids, small molecule sugars, and vitamins. Furthermore, these metabolites were mapped to their respective biosynthesis pathways to understand the biochemical reactions triggered by fermentation. Kyoto Encyclopedia of Genes and Genomes (KEGG) analysis revealed 485 enriched metabolites in metabolism-related pathways, including 37 carbohydrate metabolites, 79 amino acid metabolites, and 22 lipid metabolites. The fermentation of okara resulted in a gradual enrichment of metabolites and stabilization of compounds.

Role of Lactic Acid Bacteria in Food Preservation and Safety

Agnieszka Zapasnik et al.

Summary: Fermentation by lactic acid bacteria is an ancient form of food preservation. Lactic acid bacteria have antimicrobial activity against foodborne pathogens and the ability to neutralize mycotoxin. This activity is mainly due to the production of metabolites such as lactic acid, organic acids, hydroperoxide, and bacteriocins. The use of lactic acid bacteria may provide an alternative to chemical preservatives in biopreservation.

Biofilm formation and inhibition mediated by bacterial quorum sensing

Yingsong Wang et al.

Summary: As a complex microbial aggregate, biofilm is a group behavior of bacterial ability to adapt to the environment. Bacteria produce biofilm substrates that enhance their tolerance to stress and cause microbial infections. Biofilm infection is usually closely related to virulence, pathogenicity, and even life-threatening to immunocompromised patients. Therefore, studying bacterial biofilm generation and regulatory mechanisms has become one of the most important fields. It is well known that biofilm formation involves group behavior and relies on complex regulation of quorum sensing (QS). A series of small molecule compounds such as indole, AI-2 (autoinducer-2), AHL (N-acyl-homoserine lactone), AIP (auto-inducing peptide), and DSF (diffusible signal factor) are widely available intraspecific or interspecific signaling molecules, with regulatory functions on a wide range of physiological activities of bacteria, including biofilm formation. Given that various bacteria employ QS mechanisms to regulate biofilm formation, inhibition of QS becomes a promising potential strategy for the treatment of bacterial infections. Here, we describe how bacterial intraspecific and interspecific signaling molecules regulate the mechanism of biofilm formation and dispersion. This may contribute to anti-biofilm active molecules and provide ideas or directions for studies on controlling bacterial infections by inhibiting biofilm formation through QS.
