Vegetable-enriched bread: Pilot and feasibility study of measurement of changes in skin carotenoid concentrations by reflection spectroscopy as a biomarker of vegetable intake

Summary: The aim of this study was to assess the impact of consuming pumpkin- and sweetcorn-enriched bread on carotenoid status. However, the results showed that daily consumption of 200 g of enriched bread for 2 weeks did not change carotenoid levels. The study also found a positive correlation between intake of carotenoid-rich foods and carotenoid concentrations in the blood.

The effects of rehydration, cooking, and syrup conditions on the composition, texture, and color of the candied chestnuts were investigated. Multi-objective optimization of cakes formulated with fig or date syrup and different hydrocolloids based on TOPSIS

Summary: This study prepared cakes from sucrose, date or fig syrups, and novel hydrocolloids such as Alyssum homolocarpum seed gum (AHSG) and basil seed gum (BSG). The best cake formula was selected using the multi-criteria decision making method TOPSIS. The experimental results showed that cakes made with sucrose had better quality than those made with syrups. However, fig syrup outperformed date syrup in terms of cake performance, and cakes made with fig syrup were very similar to those made with sucrose in terms of physical and organoleptic properties. The addition of gums improved the cake quality, with no significant differences observed between AHSG and BSG in most evaluated parameters. Based on the TOPSIS results, the sample containing fig syrup and BSG was selected as the optimum syrup-containing cake formula.

Physicochemical, Pasting, and Thermal Properties of Native Corn Starch-Mung Bean Protein Isolate Composites

Summary: The aim of this study was to investigate the effect of mung bean protein isolate (MBPI) on the physicochemical, pasting, and thermal properties of native corn starch (NCS). The results showed that increasing MBPI concentration led to higher swelling power, water absorbance capacity, and solubility of NCS. Additionally, the addition of MBPI lowered the pasting temperature, final viscosity, and setback, while increasing the peak viscosity and breakdown. The thermal properties of NCS/MBPI gels exhibited higher onset, peak, and conclusion temperatures, but lower gelatinization enthalpy, with increasing MBPI concentration. Fourier transform infrared spectroscopy (FT-IR) analysis indicated a decrease in hydrogen bond content within starch upon addition of MBPI. Furthermore, the freeze-thaw shock test showed reduced syneresis in NCS-MBPI composites.

Exploring the Potential of Andean Crops for the Production of Gluten-Free Muffins

Summary: The utilization of Andean Crop Flours (ACF) increased total dietary fiber content and resulted in darker colored muffins with lower fat and protein contents. The rheological properties of the doughs showed unstructured and viscous behavior, with an increase in textural parameters after 5 days. Muffins with ACF had low microbial counts during storage and high overall acceptability, especially those containing sucralose.
