Covalent polyphenol with soybean 11S protein to develop hypoallergenic conjugates for potential immunotherapy

Summary: This study investigated the effects of covalent conjugation of 11S soybean globulin with EGCG and CHA on protein structure, digestibility, and allergenicity. The conjugates formed cross-linked protein polymers, changing the structure and increasing protein digestibility. Effects of fabrication of conjugates between different polyphenols and bovine bone proteins on their structural and functional properties

Effects of apple polyphenols and hydroxypropyl-β-cyclodextrin inclusion complexes on the oxidation of myofibrillar proteins and microstructures in lamb during frozen storage
